Court House Lemon Squares

    Mix together and pat into buttered 9x13 pan;
    1˝ cups flour
    1/2 cup brown sugar
    1/2 cup shortening
    Bake at 275 degrees F. for 10 minutes.

    Mix together;
    2 eggs, beaten
    2 sticks of sweet creamy melted butter
    1 cup brown sugar
    1 1/2 cups coconut
    1 cup chopped nuts (pine)
    2 tablespoons flour
    1/2 tsp. baking powder
    1/4 tsp. salt
    1/2 tsp. vanilla
    Pour this mixture onto the crust and bake in pre-heated oven for 20 minutes at 375 degrees F.

    Frost while warm with;
    1 cup conf. sugar
    Juice of 1 large lemon
    Dash of finely very grated lemon rind
    Cut into squares & top w/lemon drop candy on ea. square!



Lemon Law Grass Soup w/Shrimp

    WARNING: Do not drink while driving
    1˝ pounds shrimps - medium to large
    2 cloves garlic, finely chopped or pressed
    1 shallot, finely chopped
    2 tablespoons of "Lucky" (or substitute brand) fish sauce
    2 medium-size hot red chili peppers, seeded and chopped fine or red chili paste
    1 pinch of cayenne pepper
    1 tablespoon extra virgin olive oil
    3 stalks lemon grass, bottom 1/3 only, cut into 1" pieces
    1 lb. shitake mushrooms, sliced extra thin
    1 qt. chicken stock (non-MSG)
    4 limes, juice only
    1 package Oriental wheat noodles

    Sauté clean, peeled shrimp in large pre-heated pan with virgin olive oil until almost seared on both sides.
    Stir in shallots, chopped garlic and chili peppers in oil for 5-7 minutes, letting simmer.
    Add chicken stock and lemon grass, bringing to a boil.
    Reduce heat and simmer 30-40 minutes.
    Add mushrooms, fish sauce and lime juice.
    Add 1 tbs. of salt and dust w/cracked pepper.
    Boil noodles with 1 tsp. of fresh squeezed lemon & add to stock.
    Serves 4.



When you have lemons make...the best darn Lemonade you ever had!

    Using a 2 qt. glass pitcher:
    Halve 12 large lemons, remove seeds & squeeze thoroughly into pitcher.
    Stir in 2 cups of raw sugar
    Add cold water to fill
    Float 4-6 thin lemon slices
    WARNING: May eat paint if tossed on car!
